At Pendenza, our process might look straightforward, but you can’t reduce it to a checklist.
We look for wines that show balance, edge, and purpose. That means starting with family-run vineyards: people who farm thoughtfully, not just chase volume.
We taste for clarity first: Is the structure there before the fruit? Is it real character, or just something built by cultured yeast and fancy barrels? Would it sit comfortably on a serious list or is it just there to fill a category?
Lab reports matter, but chemistry doesn’t tell you if a wine sparks curiosity or makes a sommelier pause and nod. That’s why we still swirl, smell, debate, and take notes. Some things can’t be captured in numbers.
